more a question of economics than performance. I have to get a new cassette for my training wheels. Sick of changing over from training to race and vice versa. I have a 105 chain and ultegra back derailleur. Is the the ultegra worth the extra $20 ($93 compared to $70).

I always spend money on chains and cassettes. I Always buy dura-ace chains and ultegra and dura-ace cassettes. I "think" i can tell the difference with better shifting performance.

With chains you pay for quality...there's a lot of moving parts in a chain. --> Dura-Ace for sure.
With cassettes you pay for weight (or lack of). --> Ultegra is a good option.
12-25 (or 12-23) is all you need. I bet you'd never use an 11 anyway.

Pretty much echoing the above but the 'go do this' answer in my opinoion is Ultegra Cassette with Dura Ace chain. Do this even if you ride SRAM.
As far as the ratios go, the only thing to remember that if you ride shimano or SRAM and want an 18 tooth cog in your cassette you have to go the Shimano 12-23. 18 is an excellent one to have for the 36-38km/hr cruise. You can of course get by without it but I found that after having it I want it all the time. That said I have done Ironman with a 12-27 before. Don't let people tell you that you only ever need a 23 unless you are a pussy.
The only time I have ever used and 11 is in a Team Time Trial with a 40km/hr tail wind riding with two guys who had 56 tooth front rings and I 'only' had a 54.

Ultegra good middle of the road option. Dura Ace has a significant bling index that you pay alot for with a marginal if any icrease in performance. I don't actually notice any difference in shifting quality from my dura ace deraillleur to my 105 derailleur on my 2 road bikes. I know some pretty quick guys who ride 105. I ride 12-27 in training around Canberra, most guys I see ride a 25. It just gives that next option when you hit somewhere really steep. Horses for courses.
